For Crust:
40 Vanilla Wafers, crushed
1/4 cup Pecans, finely chopped
1/4 cup Margarine, melted
2 Tbsp. Sugar

For Filling:
2 8-oz. pkgs. Cream Cheese, softened
1/2 cup Sugar
1 tsp. Vanilla Extract
3 Eggs

Preheat Open Country® Roaster Oven to 400ºF.

Combine crust ingredients: stir until well mixed. Pour into 9" springform
pan; pat down with back of spoon; set aside.

Place cream cheese, sugar and vanilla in large mixing bowl; beat until
smooth. Add eggs, one at a time, beating well after each addition. Beat for two
minutes on medium speed. Pour over crust.

Place pan on rack. Set rack in preheated cookwell. Cover; bake 50 to 55
minutes or until set.

Option: Spoon fruit pie filling (any flavor) over slices before
serving.
